🍫 Brownie Refrigerator Cake
Rich fudgy brownie, creamy chocolate filling, fluffy chocolate whipped cream, and plenty of chocolate curls make this chilled dessert hard to resist.
Ingredients
Brownie Base
- 1 box fudge brownie mix
- Eggs, oil, and water called for on the box
- ½ tsp espresso powder, optional
Chocolate Cream Layer
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1½ cups heavy whipping cream
- ½ cup unsweetened cocoa powder
Chocolate Whipped Topping
- 2 cups cold heavy whipping cream
- ½ cup powdered sugar
- ¼ cup cocoa powder
- 1 tsp vanilla extract
Topping
- ½ cup chocolate frosting or ganache
- Chocolate curls or shaved chocolate
Directions
- Prepare the brownie mix according to the package directions, adding espresso powder if desired. Bake in a 9×13-inch pan and cool completely.
- Beat cream cheese, powdered sugar, and vanilla until smooth. Add heavy cream and cocoa powder, then whip until thick and fluffy.
- Spread the chocolate cream evenly over the cooled brownie.
- Whip the topping ingredients until stiff peaks form. Spread or pipe over the chocolate cream layer.
- Add dollops of chocolate frosting or ganache and generously scatter chocolate curls over the top.
- Refrigerate for at least 4 hours, preferably overnight, so the layers become cold and firm.
- Slice straight from the refrigerator and serve chilled.
Tip: For extra-rich slices, drizzle with warm chocolate ganache just before serving. 🍫
