🍫 Chewy Toffee Cookie Bars
Warm, buttery, gooey cookie bars layered with homemade toffee, finished with dark chocolate and flaky sea salt. The centers stay soft and caramel-like while the edges bake up golden and chewy. 🤎
Ingredients
Cookie Bars
- 1 cup unsalted butter, melted
- 1½ cups packed brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 cup chocolate chips
Toffee Layer
- ½ cup unsalted butter
- ¾ cup packed brown sugar
- ¼ cup heavy cream
- 1 tsp vanilla extract
- Pinch of salt
Topping
- ½ cup dark chocolate, melted
- Flaky sea salt
Directions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Whisk melted butter, brown sugar, and granulated sugar until smooth. Add eggs and vanilla.
- Stir in flour, baking powder, and salt just until combined. Fold in chocolate chips.
- Spread the dough evenly into the pan and bake for 18–20 minutes, until lightly golden but still soft in the center.
- Meanwhile, make the toffee. Melt butter and brown sugar in a saucepan over medium heat. Stir in heavy cream and simmer for 2–3 minutes, stirring frequently. Remove from heat and add vanilla and salt.
- Pour the warm toffee over the partially baked cookie bars. Return to the oven for 8–10 minutes, until bubbling around the edges and gooey in the center.
- Cool until the bars are set enough to slice. Drizzle with melted dark chocolate and sprinkle with flaky sea salt.
- Cut into squares and serve slightly warm for that extra-gooey toffee center. 🤤
