Warm, buttery, gooey cookie bars layered with homemade toffee, finished with dark chocolate and flaky sea salt. The centers stay soft and caramel-like while the edges bake up golden and chewy. 🤎

Ingredients

Cookie Bars

  • 1 cup unsalted butter, melted
  • 1½ cups packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup chocolate chips

Toffee Layer

  • ½ cup unsalted butter
  • ¾ cup packed brown sugar
  • ¼ cup heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

Topping

  • ½ cup dark chocolate, melted
  • Flaky sea salt

Directions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Whisk melted butter, brown sugar, and granulated sugar until smooth. Add eggs and vanilla.
  3. Stir in flour, baking powder, and salt just until combined. Fold in chocolate chips.
  4. Spread the dough evenly into the pan and bake for 18–20 minutes, until lightly golden but still soft in the center.
  5. Meanwhile, make the toffee. Melt butter and brown sugar in a saucepan over medium heat. Stir in heavy cream and simmer for 2–3 minutes, stirring frequently. Remove from heat and add vanilla and salt.
  6. Pour the warm toffee over the partially baked cookie bars. Return to the oven for 8–10 minutes, until bubbling around the edges and gooey in the center.
  7. Cool until the bars are set enough to slice. Drizzle with melted dark chocolate and sprinkle with flaky sea salt.
  8. Cut into squares and serve slightly warm for that extra-gooey toffee center. 🤤
