Ingredients
Chocolate Cake
- 2 cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 large eggs
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup hot coffee or hot water
Coconut-Pecan Filling
- 1 cup evaporated milk
- 1 cup granulated sugar
- 3 large egg yolks
- ½ cup unsalted butter
- 1 tsp vanilla extract
- 1⅓ cups sweetened shredded coconut
- 1 cup chopped pecans
Instructions
- Preheat oven to 350°F. Grease and line three 8-inch round cake pans.
- Whisk together flour, sugar, cocoa, baking soda, baking powder, and salt.
- Add eggs, buttermilk, oil, and vanilla. Mix until combined, then slowly stir in the hot coffee.
- Divide batter between pans and bake for 22–27 minutes, or until a toothpick comes out with a few moist crumbs. Cool completely.
- For the filling, combine evaporated milk, sugar, egg yolks, and butter in a saucepan. Cook over medium heat, stirring constantly, for about 10–12 minutes until thickened.
- Remove from heat and stir in vanilla, coconut, and pecans. Let cool.
- Layer the cakes with generous amounts of coconut-pecan filling between each layer. Cover the top and sides with the remaining filling.
- Sprinkle with extra chopped pecans and coconut, then slice and serve.
Tip: Chill the assembled cake for about 30 minutes before slicing for cleaner layers.
