☕ Tiramisu Cookies
Soft, rich cookies with swirls of chocolate and espresso, finished with a creamy mascarpone center and a dusting of cocoa powder.
Ingredients
For the cookies
- 1 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons instant espresso powder
- 3/4 cup semi-sweet chocolate chunks
For the mascarpone cream
- 4 oz mascarpone cheese, softened
- 1/3 cup heavy whipping cream
- 3 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
For topping
- Unsweetened cocoa powder
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Whisk together flour, cocoa powder, baking powder, and salt.
- In another bowl, beat butter, brown sugar, and granulated sugar until creamy. Mix in the egg, vanilla, and espresso powder.
- Gradually add the dry ingredients. Fold in the chocolate chunks.
- Scoop the dough into large balls and place them several inches apart on the baking sheet. Gently flatten each one and make a shallow indentation in the center.
- Bake for 10–12 minutes, until the edges are set but the centers remain soft. Cool completely.
- Beat mascarpone, heavy cream, powdered sugar, and vanilla until thick and creamy.
- Spoon or pipe mascarpone cream into the center of each cooled cookie.
- Finish with a generous dusting of cocoa powder.
Tip: Refrigerate the finished cookies for about 20–30 minutes before serving for an even creamier tiramisu-style texture.
