🍑 Apricot Coconut Hungarian Tarts 🥥

Buttery, crumbly layers with a sweet apricot center and plenty of coconut make these bars perfect with coffee or tea.

Ingredients

Crust & Crumble

  • 2 cups all-purpose flour
  • 1 cup sweetened shredded coconut
  • ¾ cup granulated sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1 tsp vanilla extract

Filling

  • 1½ cups apricot preserves
  • 1 tbsp lemon juice

Directions

  1. Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper.
  2. Mix flour, coconut, sugar, baking powder, and salt. Cut in the cold butter until coarse crumbs form.
  3. Add egg and vanilla, mixing until the dough becomes crumbly but holds together when pressed.
  4. Press about ⅔ of the mixture firmly into the bottom of the pan.
  5. Stir apricot preserves with lemon juice, then spread evenly over the crust.
  6. Crumble the remaining dough over the apricot layer.
  7. Bake for 35–40 minutes, until the top is lightly golden.
  8. Cool completely before lifting from the pan and cutting into squares.

✨ For cleaner slices, chill the bars for about 30 minutes before cutting.
