🍌🥃 Bourbon Brown Butter Banana Bread

Rich, moist banana bread made with nutty brown butter, ripe bananas, a splash of bourbon, and warm cinnamon. The caramelized top and optional pecans make it especially good served warm with butter.

🛒 Ingredients

  • ½ cup (115 g) unsalted butter
  • 3 very ripe bananas, mashed
  • ½ cup (100 g) brown sugar
  • ¼ cup (50 g) granulated sugar
  • 2 large eggs
  • 2 tbsp bourbon
  • 1 tsp vanilla extract
  • 1½ cups (190 g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • ½ cup chopped pecans or walnuts, optional

👩🍳 Instructions

  1. Brown the butter: Melt butter in a small saucepan over medium heat. Cook for 5–6 minutes, swirling occasionally, until golden brown with a nutty aroma. Remove from heat and cool slightly.
  2. Prepare: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
  3. Mix the wet ingredients: Whisk mashed bananas, brown sugar, granulated sugar, eggs, bourbon, and vanilla together. Slowly whisk in the cooled brown butter.
  4. Add the dry ingredients: In a separate bowl, whisk flour, baking soda, cinnamon, and salt. Fold into the banana mixture just until combined. Fold in pecans or walnuts if using.
  5. Bake: Pour batter into the loaf pan. Bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  6. Cool: Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack. Allow it to cool for about 30 minutes before slicing.

Optional Bourbon Glaze: Mix ½ cup powdered sugar with 1–2 tablespoons bourbon until smooth, then drizzle over the cooled loaf.

Serve thick slices slightly warm with softened butter. 🍌🧈🥃
