🍌🥃 Bourbon Brown Butter Banana Bread
Rich, moist banana bread made with nutty brown butter, ripe bananas, a splash of bourbon, and warm cinnamon. The caramelized top and optional pecans make it especially good served warm with butter.
Makes: 1 loaf (8–10 slices)
Prep: 20 minutes | Bake: 55–60 minutes
🛒 Ingredients
- ½ cup (115 g) unsalted butter
- 3 very ripe bananas, mashed
- ½ cup (100 g) brown sugar
- ¼ cup (50 g) granulated sugar
- 2 large eggs
- 2 tbsp bourbon
- 1 tsp vanilla extract
- 1½ cups (190 g) all-purpose flour
- 1 tsp baking soda
- ½ tsp ground cinnamon
- ¼ tsp salt
- ½ cup chopped pecans or walnuts, optional
👩🍳 Instructions
- Brown the butter: Melt butter in a small saucepan over medium heat. Cook for 5–6 minutes, swirling occasionally, until golden brown with a nutty aroma. Remove from heat and cool slightly.
- Prepare: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
- Mix the wet ingredients: Whisk mashed bananas, brown sugar, granulated sugar, eggs, bourbon, and vanilla together. Slowly whisk in the cooled brown butter.
- Add the dry ingredients: In a separate bowl, whisk flour, baking soda, cinnamon, and salt. Fold into the banana mixture just until combined. Fold in pecans or walnuts if using.
- Bake: Pour batter into the loaf pan. Bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool: Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack. Allow it to cool for about 30 minutes before slicing.
✨ Optional Bourbon Glaze: Mix ½ cup powdered sugar with 1–2 tablespoons bourbon until smooth, then drizzle over the cooled loaf.
Serve thick slices slightly warm with softened butter. 🍌🧈🥃
