🍫 Chocolate Mousse Cake

Rich, fudgy chocolate cake topped with a thick layer of silky chocolate mousse and finished with glossy ganache. This one looks impressive but still works well for a make-ahead dessert.

Ingredients

Chocolate Cake

  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • ⅓ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 large egg
  • ½ cup milk
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract
  • ½ cup hot coffee

Chocolate Mousse

  • 8 oz semisweet chocolate, chopped
  • 2 cups heavy whipping cream, divided
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Chocolate Ganache

  • 4 oz semisweet chocolate
  • ½ cup heavy cream
  • Chocolate shavings, for topping

Directions

  1. Preheat oven to 350°F. Grease and line an 8-inch springform pan.
  2. Whisk together flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. Add egg, milk, oil, and vanilla. Mix until smooth, then slowly stir in the hot coffee.
  4. Pour into the pan and bake for 25–30 minutes, or until a toothpick comes out with a few moist crumbs. Cool completely.
  5. For the mousse, melt the chocolate with ½ cup heavy cream until smooth. Cool until just slightly warm.
  6. Whip the remaining 1½ cups cream with powdered sugar and vanilla until medium peaks form. Gently fold in the melted chocolate.
  7. Spread the mousse evenly over the cooled cake. Refrigerate for at least 4 hours, preferably overnight.
  8. Heat the ganache cream until steaming, pour over the chocolate, and let sit for 2 minutes. Stir until glossy.
  9. Pour ganache over the chilled cake, letting some drip down the sides. Finish with chocolate shavings and chill until set.

Tip: For the cleanest slices, use a sharp knife dipped in hot water and wiped dry between cuts.
