🍓 Strawberry Frosted Sugar Cookie Bars
Soft, buttery strawberry sugar cookie bars topped with a fluffy strawberry buttercream. Freeze-dried strawberries give both the bars and frosting a strong berry flavor without adding excess moisture.
Ingredients
Strawberry Sugar Cookie Bars
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- ½ cup light brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ¾ cup crushed freeze-dried strawberries
Strawberry Buttercream
- ¾ cup unsalted butter, softened
- 2½ cups powdered sugar
- ½ cup freeze-dried strawberries, finely crushed
- 1 tsp vanilla extract
- 2–3 tbsp heavy cream or milk
- Pinch of salt
Directions
- Preheat oven to 350°F. Line a 9×13-inch pan with parchment paper and lightly grease.
- Beat butter, granulated sugar, and brown sugar until creamy. Mix in eggs and vanilla.
- Add flour, baking powder, and salt. Mix just until combined, then fold in the crushed freeze-dried strawberries.
- Press dough evenly into the prepared pan. Bake for 22–27 minutes, until the edges are lightly golden and the center is set. Cool completely.
- For the frosting, beat butter until smooth. Add powdered sugar, crushed strawberries, vanilla, salt, and enough cream to make the frosting light and fluffy.
- Spread or pipe a thick layer of strawberry buttercream over the cooled bars. Slice into squares and serve.
🍓 Tip: Crush the freeze-dried strawberries into a mixture of fine powder and small pieces for plenty of strawberry flavor and those pretty red specks throughout.
