Strawberry Frosted Sugar Cookie Bars

🍓 Strawberry Frosted Sugar Cookie Bars

Soft, buttery strawberry sugar cookie bars topped with a fluffy strawberry buttercream. Freeze-dried strawberries give both the bars and frosting a strong berry flavor without adding excess moisture.

Ingredients

Strawberry Sugar Cookie Bars

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup light brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup crushed freeze-dried strawberries

Strawberry Buttercream

  • ¾ cup unsalted butter, softened
  • 2½ cups powdered sugar
  • ½ cup freeze-dried strawberries, finely crushed
  • 1 tsp vanilla extract
  • 2–3 tbsp heavy cream or milk
  • Pinch of salt

Directions

  1. Preheat oven to 350°F. Line a 9×13-inch pan with parchment paper and lightly grease.
  2. Beat butter, granulated sugar, and brown sugar until creamy. Mix in eggs and vanilla.
  3. Add flour, baking powder, and salt. Mix just until combined, then fold in the crushed freeze-dried strawberries.
  4. Press dough evenly into the prepared pan. Bake for 22–27 minutes, until the edges are lightly golden and the center is set. Cool completely.
  5. For the frosting, beat butter until smooth. Add powdered sugar, crushed strawberries, vanilla, salt, and enough cream to make the frosting light and fluffy.
  6. Spread or pipe a thick layer of strawberry buttercream over the cooled bars. Slice into squares and serve.

🍓 Tip: Crush the freeze-dried strawberries into a mixture of fine powder and small pieces for plenty of strawberry flavor and those pretty red specks throughout.
