🍰 White German Chocolate Cheesecake Cake

Ingredients
Cheesecake Layer
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs, room temperature
- 1 tsp vanilla extract
White Cake Layers
- 1 box (15.25 oz) white cake mix
- 1 cup whole milk or buttermilk
- ⅓ cup vegetable oil
- 3 large eggs
- 1 tsp vanilla extract
- ½ tsp almond extract, optional
Coconut-Pecan Frosting
- 1 cup evaporated milk
- 1 cup granulated sugar
- 3 large egg yolks
- ½ cup unsalted butter
- 1 tsp vanilla extract
- 1⅓ cups sweetened shredded coconut
- 1 cup chopped pecans
Directions
1️⃣ Make the cheesecake: Preheat oven to 325°F. Grease a 9-inch springform pan. Beat cream cheese and sugar until smooth. Mix in eggs one at a time, then vanilla. Pour into pan and bake 35–40 minutes, until the edges are set and center has a slight jiggle. Cool completely, then refrigerate at least 4 hours.
2️⃣ Bake the cakes: Heat oven to 350°F. Grease and flour two 9-inch round pans. Mix cake mix, milk, oil, eggs, vanilla, and almond extract. Divide between pans and bake 24–28 minutes, or until a toothpick comes out clean. Cool completely.
3️⃣ Make the frosting: Combine evaporated milk, sugar, egg yolks, and butter in a saucepan. Cook over medium heat, whisking constantly, for 10–12 minutes until thickened. Remove from heat and stir in vanilla, coconut, and pecans. Cool completely.
4️⃣ Assemble: Place one cake layer on a serving plate and spread with a thin layer of frosting. Add the chilled cheesecake layer and another thin layer of frosting. Top with the second cake layer. Cover the top and sides generously with the remaining coconut-pecan frosting.
5️⃣ Chill & serve: Refrigerate for at least 1 hour before slicing. Serve chilled or allow slices to soften slightly at room temperature.
